Two things:

1) For classes, maybe there could be an "other" option, and if you choose 
that a whole set of other classes appear that are more like jobs. So instead 
of being a warrior, you could choose to get a whole set of blacksmithing 
skills. This would promote a complex economy.

2) Is it possible to make mobs unique? As in, if you kill a villager, that 
paticular villager would be gone forever, and it would take a while for a 
new one to take his place. NPC would become more like PCs if this 
happened... if you killed one, an identicle one wouldn't pop up in their 
place. This would be used mainly for people, since they tend to be the only 
mobs to have names, but it could also be used with animals as well. If each 
animal is kept track of, you could make it so that they have a natural life 
cycle and two animals are required to "breed" and produce an offspring. The 
main reason this would be good is that if enough are killed, they could 
become endangered and eventually extinct. Pelts of endangered animals would 
go up in price, but there could be laws against killing them if the number 
got below a certain point.
