Can anyone give me some guidance, please?

You can change the name of the mount in the Sunfish front end so it doesn't
include the path.
Right click the iconbar icon.
Double click the NFS server that comes up.
Click menu over the one to rename. Then Edit->Name Export.

The path becomes e.g. Sunfish::mymount.$
