there's not much to it. Simply replace dispread or printtarg/chartread with
fakeread.
i.e., say you wanted to create a cLUT version of sRGB with gamut mapping:
targen -v -d3 -f5000 -csRGB.icm cLUTsRGB
fakeread sRGB.icm cLUTsRGB
colprof -v -D"cLUT sRGB" -qh -S source.icm -cmt -dmt cLUTsRGB
(Because the reading is fast, you can up the number of test points
to get better fidelity of the cLUT to the matrix profile.)
