You can just change the numbers in the file if you want, since
it is text. If you parse it with a spreadsheet program,
and then plot the curves this may give you better visualization
of your changes, or (depending on the spreadsheet) allow
you to move the curves directly. You just need to set
the spreadsheet parsing parameters appropriately -
space or tab as a separator, and you may also need
to play with the text delimiter to make the saved out
file work (ie. on open office you need to set it to
no text delimiter, so that it doesn't add extra double quotes).

If it were me though, I'd be trying to figure out how
to avoid doing this, by making sure that the room was dark,
and that the instrument can't "see" and light from any
on screen controls.
