You are not deleting stitch direction , per sae, but you are deleting wireframe connectors in a satin stitch column in her example. The wireframe connectors have a wireframe point on both sides of the column. Moving one of these points will change the direction of the stitch or lean it, would be a better term, for the section of the column it controls. These wireframe connectors can be deleted or more added at will. Deleting them, if the connector is not spanning at right angles to the column, will change the directon of the stitch within the section it controlled. Is that deleting "stitch direction"? No, it may change stitch direction, but does not delete it. Are you deleting "stitch direcion" lines, no, only the wireframe connectors that control a section of the column that may be used to control the amount of "lean" or direction of the stitch across the column in a specific section of the column.
