I understand what you are saying, but that would be like Synaptics saying their touch pads will have a fixed sensitivity. People would complain about this. Humidity along with other factors can affect how a touch pad works. I personally hate it when I'm trying to type and the mouse decides to start moving and clicking. This is why I have it set to the least sensitive setting. I know it's a bit different with Apple devices. I personally don't see anything wrong with having this setting available.

After you add a person from your contacts the virtual keyboard and edit field is hidden. In the lower left corner there's a button, can't remember the title right now but it's labeled and when you double tap it everything goes back to normal.
