If you were using touch typing mode, then those instructions would be
correct. I believe you need to double tap the space bar twice, if you want
to stay in standard typing mode.

I’ve always tapped the screen twice with one finger to insert a space, and
tapped the screen three times to insert a full stop and a space. I hope
someone can give a horribly confused man a step by step instructions!

Sorry Ian, how do you mean? Surely for us VoiceOver users double-tapping the
spacebar only inserts a space? Please explain. Double-tapping inserts a full
stop if you are not using VoiceOver. As I said, I used to tap the spacebar
three times to insert a full stop followed by a space.
The three-tapping ceased to work after upgrading to iOS 13 if memory serves.
And I’ve checked the period shortcut in settings>keyboard and it is on.
