Yes you can.  I’ve tried it in Notes on my iPhone, and was able to write a note 
without difficulty.

So can you connect the Orbit reader to the iPhone to use like a Braille 
display, in other words can you use it to text, email etc as well as reading 
books and taking notes?

The Orbit reader is a 20  cell Braille reader, it allows you to read your 
Braille but also to do your note taking.
