Hi Brendan
All you do is hold down the Home button until you hear a beep-beep sound.
Then release the button, and say: "Launch app of your choice". Siri will
give another beep and hopefully launch what you asked for. It definitely
won't launch the app if it doesn't pick up what you say properly. I think
it will find songs if you have music on your device, but as I don't have any
on my iPhone, I can't vouch for this.

What do you do in order to ask Seri to open an app. Do you have to somehow
open Seri?

I use Siri to dictate text messages, though I can use the touch-screen
keyboard as well. I also use it to launch the apps on my iPhone. For
example, I will say: "Launch App Store", or "Launch Sky Sports". When
dictating text messages, I speak reasonably slowly and precisely so Siri
generally gets accurately what I want to say. The Dictate button is fairly
easy to find. You do a double tap with one finger to start, and wait for
the beep. Once you have dictated your message, finish by performing a
two-finger double tap. Make sure your fingers are apart slightly so that
Siri knows you are indicating the finish of dictation. Wherever there is a
search field in your app, there should be a Dictation button for you to use
Siri.
I also ask Siri questions like: "Today's football fixtures", and "Will I
need an umbrella today"? I do like it, and I think it can only get better
if they work on it at Apple. When I first played with it, I wondered if it
would be rather gimmicky, but I actually use it every day. And, to be fair,
the more I have used it, the more proficient I have become.
