Steve,

An M4A music file can be lossless or lossy - it's just a container extension

and can't be used in itself to determine if the content is lossless or 
lossy.

It will, but I've no idea why you'd want to convert a lossless compression
format like M4A to MP3.  Most players can now play M4A just fine, so you can
just get rid of iTunes, since there is no DRM on your files.

I am not and will never be an Itunes user. I have a program called Switch
sound file converter which I use to convert windows media files to MP3 but
have no idea whether or not it can convert files in the Itunes format.
