Jackie, same as in text messages and MSN chats. :) and :( happy and sad faces respectively. If you meant how to get Jaws to pronounce them as such in email messages just modify the OE dictionary manager.

Hi Andy and James As far as I can tell, colon, dash and right parenthesis is a smiley face, while colon, dash and left parenthesis is a sad face. If I also do just a colon and right parenthesis or colon and left parenthesis, TALKS still announces smiley face and sad face respectively, so I'm not sure if there is a distinction on the phone's display between the two types of smiley and sad face. But whatever they are, and however you do them, I adore them!! (smiley face). How do you make them in an Email message though? I think that's correct, other people can correct me if I'm wrong.
