Don't know about vista or windows 7 but in XP the boot menu can be changed by editing the boot.ini file found in root, but be careful and read up about how and what to do first.

Peter recently said:-

Yes, or if you reinstall Vista, would it make Vista the default option. Would like to know the answer to that.

"As for duel booting, I found after installing Windows 7, that Windows 7
is
the first and default option on the boot menu. Vista is the next one
down."

Currently reinstalling VISTA on second partition so will inform if it
works with Windows 7.0 on the first dual booting.
