All you do is delete the iTunes folder in your music folder. Note! This will 
erase all the contents of your iTunes library!

Hi, I'm trying to go back to itunes 8 from the latest version. I uninstalled
version 8.1 and installed version 8. When I clicked to open it I got a
message saying that the itunes library could not be read because it had been
created by a later version of itunes. I've reinstalled version 8.1 but would
prefer to use a version that's more accessible. What do I do about the error
message saying that itunes 8 can't read the library created by 8.1?...cheers
