Perhaps to sighted people it is more appealing also and quicker to learn.

  There is nothing to my knowledge in Office 2007 that makes things easier for 
a screen reader user.  I would stick with Office 2003 if you have a valid 
license.  The main thrust of Office 2007 was to make features more accessible) 
at least that is the advertising copy perhaps) but to experienced users it is 
more like patronising and dumbing down (especially Excel I think).
