Also been looking at panasonic dect phones.

The kxtg7100 was the popular one on this list about a year ago.  This has 
been replaced by the kxtg7200 which seems to have the same features but 
some repackaging in to a smaller base unit.

If you want ansering facility, the kxtg7120 or kxtg7200 are the same as the 
7100 and 7200 but include ansering machine.

Not sure about setting menus but from reading the manual, it appears that 
you can access the ansering machine remotely by calling your number and 
you can record an outgoing message in this way.

All of these take up to 6 handsets.
The only thing that is missing from the 7 series is one touch dial.

If you want a large button handset, the kxtg7600 is available, same features 
as 7200.

Panasonic also market the 8 series which appear to have lots of visual 
facilities, wallpaper downloading and so on.  The 9 series is the top of the 
range with camera and skype adapter as options not sure how much of this 
would be accessible.

The 9 series can also record a call in progress but again, not sure if this can 
be done without sight.
