I am not yet a Mac user, but considering the challenge!

I needed the information for a patient of mine who is suffering from
bilateral RSI, initially from right-handed mousing, and now from the same on
the left.
She uses both Mac and PC, but I had never had cause to find out the Mac
resources.

Hi David,

You can get a lot of help from the Mac itself. Bring up the in-built help
for an application by pressing: Command (that's the key immediately left of
the space bar with an Apple logo on it) + shift + question mark. This will
work in all applications except Voice Over, where the help command is:
Control + Option (these are the Voice Over keys) + Shift + question mark.

Also, many of the commands on the Mac are similar to Windows with the
Command key taking the place of the Control key. I.e. Command N will open a
new window if in the Finder, or a new document if in an application such as
TextEdit or another word processor. This command will also open a blank E
Mail message in Mail.

Regarding office applications, what exactly are you using? I do not use
IWork '09 myself yet as I am waiting for the latest release, but the
conventions I have mentioned above will work there too I should think as it
is an Apple product. The same should also  be true  for many of the third
party word processors like Nisus Writer et al. The only one where this may
be different is in Open Office, which as you probably know is an open-source
cross-platform office suite. As far as I am , aware, it works on Mac OS X
without installing any other bits and pieces such as the Java Access Bridge,
although it is not one I would personally recommend after having used it for
a short time.
