Hi, For your first question: The iPod Touch has speech, but not the 8GB model. I recommend you get the latest 3G version. Speech, or voiceover as it's known can be enabled from within iTunes. So it can be used by a blind user totally out of the box as long as iTunes is accessible on the PC. Note for info that the iPhone and iPad also has voiceover. Note that the iPad is not available in the UK until May/June, however I've tried it and the voiceover there is better than that on both the iPod Touch and iPhone.
