Are we talking about in-app subscriptions (services you subscribed to through apps you downloaded through the Apple app store)? If so, you can find these in your subscriptions page in your account. You can follow the steps in this Apple knowledge base article:

If you are talking about subscriptions you made through your phone to providers using text messages or mobile billing agreements, you will have to contact those companies directly; they will usually send information periodicly to you to advise you that you are being billed, for how much and a means to opt out of the service. If you are still unsure, contact your mobile provider and they should be able to provide further information about any subscription charges that you are paying.
