Thanks to George, Chris and Benjamin for your replies.  People don't really 
have an excuse not to use plain text for the lists, as far as I can tell.

Hi Barry,

HTML, as used on many web pages, is what's called a "Tagged
Language".  For example <h1>Heading</h1> would make the word
"Heading" into a visible heading style.  Of course you do
not see what's between the < and > signs.

Plain text is just plain text.  No bold, changing fonts
size, etc..

To make an e-mail link in plain text, simple put "mailto:";
(without the quotes) immediately before the e-mail address.

With web page links, normally just making sure the "www." is
included in the address is usually sufficient to make it
into a link.
