Guess I'll sort out the spam offline, delete whatever's left for good online 
and think on from there!

  GMail doesn't seem to apply the actions properly when using imap to your spam 
folder. in other words when you delete an email from spam that you never want 
to see again, it seems to come back. however, when you permanently delete it 
via the web, it stays deleted in the future when other emails from the same 
address are sent. however, when you move a message to the inbox using offline 
imap, then in future they generally come to the inbox. i've no idea why GMail 
doesn't work properly when deleting messages from spam, but what you're doing 
seems to be correct in any case. spam protection is never 100% unfortunately. 
you could also create filters within gmail to permanently block email from 
certain senders, but most of the time it is not necessary to do this. this can 
be found in settings, filters.

of the best methods to use.  Any help with this would be much appreciated.
