So if someone could help I'd be really grateful. In Word 2003 there are two places where you need to turn this off. They're both in Tools, Options, AutoCorrect options. One tab is Autoformat, and the other is autoformat as you type. You need to turn off automatic numbered or bulleted lists in both places to get it to stop.
