Hi Phil,
in iTunes to get to the books library you need to go to view menu with alt+v then find Media Kind and enter.
Arrow down until you find books and press enter to select.
ctrl+6 is a shortcut key which will  do this.

Now check in view menu alt+v that you have show sidebar set
Now when you tab through you should come to something spoken as
"Library Sidebar tree view".
Down arrow here until you get to Audio Books, In my case I just have to down arrow once.
I then tab, in my case 6 times, and I am on a list of Audio Books.

You don't need to have this Audio Books view visible to synch.
For synching, You need to connect iPod and go to its view in iTunes.
Find books and/or Audio books here and make sure synch is ticked.

Remember to delete the audio books by pressing delete in iTunes once you no longer need them to be synched.
If you just delete them from the iPod they will be synched again every time you perform a synch.
