Hi Mo,
You don't have to move to an icon. Just put your finger on the screen and
at the same time, raise the volume. That is the official gesture for
raising Talkback's volume.

I found that holding 1 finger on the screen and moving it to an icon so
talkback reads it, then adjusting the volume while still holding your finger
down adjusts my media volume.
