I can't really answer the questions you've asked, although I'd expect the USB cable to be the printer cable which seems strange but that won't help you will it! I just wanted to check you've thought about OCR and whether it will be supported in your program. That was my main problem when searching myself as I didn't find anything to say a lot of the printer/scanners were not supported but couldn't always be sure they were either. I ended up going for a Epson DX7400 as I found a good looking review, it seemed up to date enough and came with FineReader Sprint, which although is only a basic OCR program, meant it was up to some reading.
