I just completed an on-line University course (3-credits) here in Canada.
The text we used was called: Project Management, A Managerial Approach" by
Jack R. Meredith and Samuel J Mantel, Jr. (we used 4th edition, but now the
5th edition is out) It also comes with a trial copy of MS Project.

I found the text to be a quite dry but did have some useful information on
the business end of PM such as:
Organizational structures
The role of the PM
Project selection
Planning
Conflict and negotiation
Project implementation
Scheduling (PERT, GANTT and CPM)
Resource Allocation
Control and monitoring
Termination

The instructor walked us through a typical project (in case study form) from
the cost/benefit analysis to implementation. The assignments were based on
this case study.
Our final project was to develop a project plan for a project of our choice.

I thought I'd share my experience to give an idea of what's already being
offered out there. Hope it helped!
