I like to cut salads with a sharp knife. I also spear rather than scoop and tip
the fork up a bit so that it is not parallel with the table. This seems to help
hold the salad on the fork. I have started tucking a napkin in to protect my
shirt because dressing dribbles no matter how careful I am.
If salad is served on a flat plate, keep working the edges so that it doesn't
fall off. If I know that a large salad is to be served on a flat plate, I have
asked for it to be served in a bowl.
I used to be terrified of eating salad in public. The more comfortable I have
become, the easier it is. Also it is important to remember that people who can
see drop food on themselves frequently; we just don't have the luxury of
knowing about it so that we can feel like we are not alone in doing it.

This may be considered the easy way out, but, if I'm having a salad as a meal
in a restaurant, especially one I go to regularly, I'll have them cut it up in
the kitchen. I've also asked them to just have the tomatoes cut up if
everything else is in reasonable sized pieces. As for salad at home, I make
mine in bite size pieces so nothing has to be cut up.

When I eat a salad, I often will pool the dressing in the middle of the plate
and then move it outward and toss the salad all at once.
This way the lettuce gets coated, not saturated, with dressing, and thus it
sort of binds together and is then easier to stab with a fork.
I do this because bread or "a pusher" is not always available.
