I'm going by memory here, but I'd double tap and hold on the Messages
icon in your dock. Without lifting your finger, slide the Messages icon
out of the dock and to some other place on your home page. If you want
to remove it from your home pages altogether, find the Remove icon and
slide it over that. Once the icon is where you want it, remove your finger.
For the Messenger app, if you don't have it on the home screen then find
it in the App Drawer and do a double tap and hold. This should place it
on your home screen. Now you can double tap and hold on the Messenger
icon and without lifting your finger, move it to the space you just
created in the dock and lift your finger.
