Here's a very brief article in SORA that mentions BVs attacking baby herons, domestic chicks, newborn calves, skunks, opossums, piglets, and turtle hatchlings.

When I lived in Mt. Crawford, I watched in horror one day as several
black vultures harassed a cow and her newly born calf in my neighbors'
pasture behind our house.   When they wouldn't let up and the poor cow
was getting more and more agitated I decided to call the owners.  Up
until that day I had always thought that vultures were rather passive
birds eating only what was set before them.
