Hi Rebecca,
I am not an American - BUT there has been a huge pumpkin "controversy" on
the Family list a few times. It seems that what we call a pumpkin is not
what the Americans call a pumpkin!!!!
They call our pumpkins squash and we call their pumpkins marrow :-)) The
closest we could get in the controversy (not really - just a lot of banter
back and forth) was that we agree that butternuts are pumpkins :-))
I am not sure if anyone has posted you a recipe and I tried to check the
archives for one for you - but in all of that NO-ONE actually posted a
recipe for pumpkin pie!!!! Instead they all seemed to say that they used
CANNED pumpkin!!!!
I did find these pumpkin recipes from Michelle W though :-)) I also LOVE
pumpkin, but admit that I haven't tried these ones as yet
>>Remember when we Americans say "pumpkin" we mean the round orange hard
shelled deals like for Jack-o-lanterns but are called "cooking pumpkin". Not
our squash which you call pumpkin.
Cooking pumpkin is recommended for cooking as the jack-o-lantern variety may
be tough and stringy.
~Pumpkin bread
15 or 16 ounce can (2 cups) pumpkin (cooked down mushy)
3 cups sugar
1 cup oil
2/3 cups water
4 eggs
3.5 cups flour
2 teaspoons baking soda
1.5 teaspoons salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon ginger
Heat oven to 350 degrees F. Grease 2 bread pans. In large bowl blend first 5
ingredients. Beat 1 minute at medium speed. Add remaining ingredients, blend
at low speed until moistened. Beat 1 minute at medium speed. Pur batter into
prepared pans. Bake for 60-75 minutes or until toothpick inserted in center
comes out clean. Cool for 5 minutes, remove from pans. Cool completely.
~Pumpkin Cookies
(the person I got the recipe from always had folks asking her to bake these
for school gatherings) Jim LOVES these things.
1 cup sugar
1 cup canned pumpkin
1/2 cup shortening
1 tablespoon grated orange peel
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup chocolate chips
Glaze
1/4 cup margerine or butter
2 cups powdered sugar
1 teaspoon vanilla
1 to 2 tablespoons milk
Heat oven to 375 degrees. Mix sugar, pumpkin, shortening, and orange peel.
Stir in flour, baking powder, baking soda, cinnamon and salt. Stir in
chocolate chips.
Drop dough by teaspoonfuls onto ungreased cookie sheet. Bake until light
brown, about 8-10 minutes. Immediately remove from cookie sheet. Cool.
For glaze, melt margarine or butter. Stir in powdered sugar and vanilla.
Stir in milk until smooth. Drizzle over cookies after they are cool.
There are pumpkin recipes in my cookbook that I've never tried. Pumpkin
bars, doughnut drops, pickles, pie and soup. If anyone is interested I can
copy them down but can't say how they will taste or turn out.>>
If we pause to think, we will have cause to thank.
