Michelle,
Try adding a ton of butter to the spinach.  Morgan LOVES spinach this way. 
It is probably his favorite veggie.  Just boil the spinach with water until
it is really soft then throw it in the blender with melted butter, unless
you buy the canned kind, then just blend it up with the butter.
