I just re-read your question. Sorry about the wrong answer there.
As long as the account that connects to the datastore is still valid,
you are fine. If not, then the previous message will work to change
the username and password for the connection.
When you create the datastore, the name for the farm is set as far as
I am aware.
If you wanted to you could setup a new farm database (With a new farm
name) and then chfarm the servers between the databases and re-publish
the apps.
CHFARM will allow you to move servers between farms, but I would
question what the point in renaming the citrix farm is...
