You're right, I'm using W2k3 enterprise on my virtual server hosts. I didn't
even remember.

I've just tried this in a new server with 5GB of physical RAM, but it
doesn't seem to work. Are you using Standard or Enterprise Edition? Do you
just enable it on the host, or on the Virtual machines as well? Is there a
way of telling exactly how much memory is being addressed?
I'd appreciate your help to understand exactly how you have achieved this.

I use it on my Virtual server hosts and enabled the full 12GB of RAM with
no issues.

I have read in a thread that it is possible to use more than 4gb of
RAM on the above OS by using the /PAE mode.
Has anyone done this, and if so, recommend it?
