[THIN] Outlook prompting profile on farm

How does everyone deploy outlook to a Citrix farm when certain published
apps need it to send mail and you mainly use outlook on the login
published desktop servers?  We have a login citrix published desktop
with a silo farm of custom apps published to the desktop of the citrix
login server.  When we install a new set of servers in the silo, it goes
thru the outlook setup where we need to put in username/mail server name
when someone tries to send mail from one of those apps.
 
This happened last time we did this (we manually setup each users (under
50) outlook profile) and we are installing more servers so was hoping to
figure out where the outlook profile setup resides and figure why it
does not roam to any new server.  I have remapped mydocs, TS Profiles on
main file server via GPO, redirected application data folder via GPO to
file server and we use local cached profiles and do not delete them.  I
have not setup any TS home directory being we already redirect mydocs.  
 
Any thoughts?  I could try using an outlook PRF file or OProfile but
would like to know why the actual config of outlook in not coming thru
the roaming profiles.
