[THIN] Office profiles resettign

Hey all. I am hoping that there is some great wisdom out there in
regards to this one.
Our users keep 'losing' their personalized (read: user modified)
settings (ie. Outlook loses signatures, Word loses user templates).
we run roaming TS Profiles, under AD.
We run full Office 2003 Pro over Citrix - I have the install all set
with a transform file.
I do not use a custom profile.
I do have it declared in the transform to default to plain text, with
Outlook as the editor (outlook example).
Could my transform customizations be resetting the user settings each
time they close?
If so, is there a solid way to handle this?
