Sure Citrix has a migrate function. There is a whole article in their KB

Guys,
When we setup our network here my boss did not want to put the citrix
db on SQL so we are using the access db, not since he has went to his
citrix class he wants to change it to an SQL based db, is there a way to
do this and keep the pub apps? How would I point an existing farm to the
new sql based db?
