Hi Steve,
The CAG may be configured as an appliance, but under the hood it's a fully
functional linux system with nothing stripped out, not even games. If Citrix
stripped out all the stuff that wasn't needed the CAG ISO image would
probably be under 100 MB :-(
You're best off playing with a virtual CAG initially, booted off a Knoppix
CD iso (or any CD based linux). Getting the CAG to run on VMWare workstation
or server is relatively easy but if you want to run it on ESX you'll have to
recompile the CAG kernel for SCSI disk support. Get someone who knows linux
to open the CAG up to allow console logon and you'll be able to install
whatever you want.
After that you just use a Knoppix CD and monitor/keyboard/mouse plugged into
a real CAG and away you go. Once you know what's required it wouldn't be
that hard to use MagicISO or equivalent to write the changes to the
installation ISO.

The challenge is that the CAG is configured as an appliance and does not allow the installation of additional software. I would love to know a way to do this!
