You could just set up each of the respective sites group access to their own
apps and that's all they'll see when they log on. You can also set up
multiple sites for the different farms as well on the same WI, but it is
much easier to have one site pointing to all farms with permissions set at
the group level. I would keep one WI on a different site for easy DR/fault
tollerance as well.
