Today's site is a compilation of material from a number of authoritative
U.S. government sources dealing with disease causing microorganisms and
poisonous substances, which may be present in various foods. Gentle
Subscribers, who may have been numbered among the 2 to 4 million cases of
salmonellosis each year in the U.S., may find the site to be a helpful
guide on this serious topic.

"This handbook provides basic facts regarding foodborne pathogenic
microorganisms and natural toxins. It brings together in one place
information from the Food & Drug Administration, the Centers for Disease
Control & Prevention, the USDA Food Safety Inspection Service, and the
National Institutes of Health." - from the website

The opening page lists the specific agents under the classifications of
pathogenic bacteria, enterovirulent escherichia coli group, parasitic
protozoa and viruses. For each microorganism, the handbook contains the
name of the disease caused, the nature of the disease and the infective
dose. Information in included on diagnosis, foods associated with the
pathogen, the frequency of the disease, complications, if any and the
target populations. A summary of selected outbreaks is also provided.
