The only thing I can think about this is, when violinists want have a virbrato on the lowest open string G. Since this isn't really possible, they put their finger on the G of the D string and without playing of course this string, they make a vibrato on it, which has an effect like the open string G has a vibrato. In seldom cases this technic is applied also on other open strings.
