Well, as you know Photo Score Light comes with Sibelius, so that's obvious. 
I don't know that Sharp Eye has a demo, but check on the Dancing Dots web 
site or Google.

SmartScore MIDI edition (the version I have is 2.0) is still sold 
commercially so try Googling Smartscore to see what comes up.

Are there any of these programs that can be used as a proper working demo to
give me an idea of what sort of performance I can expect?

If I'm veering too far off topic of Sibelius feel free to advise and I shall
