You may have a look at "Numerical Recipe in c" : 
http://www.library.cornell.edu/nr/cbookcpdf.html and "Handbook of 
Mathematical Functions" M. Abramowitz and I.A. Stegun. I am not sure exactly 
why digital oscilloscopes use sin(x)/x interpolation, I think it can be a 
combination of data precisions and the simplicity to implement.
