This may be a little obvious, so forgive me if it is.

First, you need a calibration fixture that is "well known".  Basically, it
need to be a section of electrically short transmission line that can be
terminated in a known impedance (generally 50 ohms).  The manufacturers of
probes usually sell this sort of thing.  Fischer Custom Communications sells
one that is tailored for their probes.  Once you have that, it's just a two
port network.

There are "checks" of the fixture you can do if you don't trust the fixture
as well.  Look at S11 and S12 with and without the probe to be calibrated in
place.  Hopefully they don't get bumped around too much.
