Powell,
You are correct. Many in most of the occasions, simulators tend to "assume"
the L, C and Z parameters of cables (also the delay through connector). And
the level of this accuracy actually is the measure of the accuracy and power
of the simulator.
Some Zuken simulators have a macromodel editor, which allows you to edit
these parameters and has many editable interconnecting options such as cable
thickness, cable gauge etc.,
