Question #1 is what do you hope to "improve" by changing out amps?  As long as 
the S-100s are serviceable, I doubt you would see any improvement to the ear.  
The advantage of "modern" amps is that the modular IC packaging reduces 
manufacturing cost over the use of discrete components.  
It is very easy to make up an amphenol to shielded cable with RCA plug 
termination.  The shield goes to Pin 1 on the amphenol, and the center 
conductor to pin 2.
Multi-channel amps work equally to the task as long as the power supply is well 
designed and can respond to the power demand during "peaks."

1. The 340 plugs from the console and into the current S-100 amps are of an

I'm trying to keep things simple and thought if I had only one amp with the
3channels I need for the 340 (Main, Brass and Tibia), it would be a simpler
all around system....but I don't know if I'd be compromising by doing so.
(Won't need the 4th channel pedal amp as my subwoofer is powered) 

Any and all thoughts and suggestions are sought here.
