I tried that with Outlook 2010, but it wouldn't let me change it. When I put
in my name instead of my e-mail address, it said it couldn't be found and
wanted to search my contact's list for a correct address. I also had to use
the JAWS cursor to even get into that field.
Maybe it will work better in 2003, but not real promising in 2010.

Go under the view menu. There is an option for From Field. That should allow
you to back tab to the from field and change the address there.
Probably only get this menu option if you have first started a new message

My sighted colleague can use the mouse to enter the "from" field and change its
text. Not sure how she's doing this or if there is a non-mouse equivalent.
That's what I'm attempting to find out.

Changing the fieldnames or their contents? The fieldnames themselves are
static--if that is what you are wanting to change.
