Hmmm, I can't figure out how to do this with Outlook 2010. Can she give you
exact steps she does? For example, is she left-clicking, right-clicking,
clicking once or twice, etc.

My sighted colleague can use the mouse to enter the "from" field and change its
text. Not sure how she's doing this or if there is a non-mouse equivalent.

Changing the fieldnames or their contents? The fieldnames themselves are
static--if that is what you are wanting to change.
