When I played around with ubuntu mate on my pi 2, I needed to use an
external USB audio adapter to work with ubuntu, or else any form of
audio output seemed to overload the hardware, but, I did also get a
sighted guy to help me configure ubuntu for the first time, since it
came up with a whole configuration wizard on initial boot-up.
This was after, the very first time, I made sure HDMI wasn't plugged in
and booted up with the external audio adapter plugged in, with an
earphone connected to it, to try get it to recognise it as the default
autio output channel, but, then booted it up again, with HDMI connected,
so my sighted connection could help with configuration, turning on orca,
etc., but anyway.
However, on normal versions of ubuntu, from a certain version upwards, I
think the key command to toggle orca on is something like alt + windows
key (super key) + S, and, have used this during install of ubuntu 16
under a VMWare image, but, not sure if it applies to ubuntu mate at all,
and, while haven't had a chance to try mate on my pi 3, on the pi 2, the
external audio adapter was definitely a requirement.
Stay well
