For the winter, why not just make a delta rear end for it? Switch back once
the nice weather hits. 

Yes, better do this and be sure to make the wheelbase long enough to
get good traction for the front wheel.

In general a two wheeled recumbent is not the best idea for winter
with ice and snow. You don´t fall deep but you will fall ten times
more than with an upright bike which allows better balancing.

Don´t try the splitted crank thing unless you are willing to experimentate
a lot. I fear that it will raise more problems than solutions.
