So now that I have found a mystery stash of Sodium Bisulfite, YAY!, I'd
like to premix some fixer in undiluted format..

  I have a recipe here for Looten's Acid Hypo:

  Water 2L
  Sodium Thiosulfate 480g
  Sodium Bisulfate 45g

Bisul _fate_ and bisul_fite_ are not the same thing. Bisulfate is strongly acid and is often found in drain cleaners.

I suspect Lootens copies Kodak F-24 an acid non-hardening fixing bath.

Kodak F-24
Water (at 125F or 52C)                        500.0 ml
Sodium Thiosulfate, crystalline                240.0 grams
Sodium sulfite, desiccated                     10.0 grams
Sodium bisulfite                               25.0 grams
Water to make                                   1.0 liter

If anhydrous Thiosulfate is used the amount is 164.0 grams and water not over 90F should be used to mix the soluton. Note that the pentahydrate (crystalline) form is strongly endothermic and may need some heating while mixing to get it into solution. The desiccated form does not need heat and hot water should _not_ be used to prevent decomposition.
