I get prints that are just lightly different, like one will be perfect, the other's highlights are too bright. 


Ilford MG IV RC Pearl, 1 minute  in Dektol.


Try a longer developing time.  Paper needs to be developed 'to
completion' - and that's at least 90 seconds in 1:2 Dektol.  Try
2 minutes and see if the variation disappears, if it does then
developing time is most likely the culprit.


I have not noticed any fogging on my prints


Safelight testing has been covered extensively on the 'net.
Expose a sheet of paper for a medium grey.  Lay a quarter on the
sheet after exposure and let it sit there for 5 minutes with the safelights on. If nothing shows up then the safelights are OK (unless 
you have one hanging right above the developer tray).


Gralab 500 electronic timer


That shouldn't be a problem.  Exposure times should be 5 seconds
or more. Check it with a watch just to 'eliminate it from our enquiry's. 


Power


Can be checked with a Darkroom Automation enlarging meter.
Set it on the easel with the enlarger on and see if the reading wanders.
